Shredded Brussels Sprouts with Garlic and Parmesan

Parmesan cheese and spicy garlic amps up the flavor of this savory brussels sprouts side dish.

Ingredients

  • 1 pound brussels sprouts, cleaned and trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable stock
  • ⅓ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • 1/8 teaspoon freshly grated black pepper
  • ¼ cup pine nuts, toasted, optional

Instructions

  1. In a food processor, shred the sprouts. They should look like slaw.
  2. In a large skillet over medium heat, saute the garlic in the olive oil just until fragrant. Stir in the sprouts, and saute until bright green.
  3. Add stock and cook until softened, but not mushy. Season and add cheese. Top with pine nuts. Serve immediately.
