Shredded Brussels Sprouts with Garlic and Parmesan

Ingredients
- 1 pound brussels sprouts, cleaned and trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken or vegetable stock
- ⅓ cup grated Parmesan cheese
- ¼ teaspoon salt
- 1/8 teaspoon freshly grated black pepper
- ¼ cup pine nuts, toasted, optional
Instructions
- In a food processor, shred the sprouts. They should look like slaw.
- In a large skillet over medium heat, saute the garlic in the olive oil just until fragrant. Stir in the sprouts, and saute until bright green.
- Add stock and cook until softened, but not mushy. Season and add cheese. Top with pine nuts. Serve immediately.
