Skillet Apple Crisp for Two

Skillet Apple Crisp for Two is the perfect small-batch dessert for dinner dates at home – or for those nights when you’re craving something sweet but don’t want leftovers lingering around for days. Ingredients

Topping:

  • ¼ cup white whole-wheat flour
  • 2 tablespoons rolled oats
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch salt
  • 3 tablespoons unsalted butter, softened

Apple Filling:

  • 1 ½ tablespoons unsalted butter
  • 2 large apples, peeled and sliced
  • 1 pinch salt
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • Vanilla ice cream, optional

Instructions

  1. Preheat oven to 350 degrees.
  2. For the topping: In a medium bowl, combine the flour, oats, sugar, cinnamon, nutmeg and salt. Using a fork or pastry blender, cut the butter into the flour mixture gradually in small pieces until everything is evenly mixed. Set aside.
  3. For the filling: In an 8-inch ovenproof skillet, melt the butter over medium heat. Add the apples and salt and cook for 2 to 3 minutes. Stir in the maple syrup, cornstarch, vanilla and lemon juice. Remove from heat.
  4. Sprinkle the crumb topping over the filling in the skillet. Cover with foil and bake for 15 minutes. Remove foil and continue baking for about 20 minutes, or until the crisp is golden brown. 
  5. Serve warm or at room temperature with vanilla ice cream, if desired.
