Sorghum Apple Walnut Cookies

Sweet sorghum and crunchy walnuts are the perfect combination for a tasty cookie.

Ingredients

  • 2 medium apples, grated and excess juice squeezed out
  • ½ cup butter
  • ⅔ cup sugar
  • 2 eggs
  • 2 tablespoons sorghum
  • ½ cups self-rising flour
  • ½ cup ground flaxseed meal
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 1 cup walnuts, chopped

Icing

  • 2 tablespoons sorghum
  • 2 tablespoons butter, melted
  • 1 cup powdered sugar
  • 1 tablespoon water

Instructions

  1. Heat oven to 350 degrees. Cream together butter, sugar and eggs. Add all remaining ingredients and stir until well combined.
  2. Drop by the spoonful onto insulated baking sheets to make 18 cookies. Bake for 10 to 12 minutes. Cookies will be puffy and still soft int he middle. Set aside to cool.
  3. For the icing: Combine all ingredients except water. Stir water in gradually to make a thick but spreadable icing. Ice each cool cookie and decorate with walnut halves if desired.
