Sweet Potato Ice Cream Pie

Ingredients
- 2 medium sweet potatoes (about 1 pound)
- 2 cups graham cracker crumbs
- ½ cup butter, melted
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- 8 ounces (1 package) cream cheese, room temperature
- 1 cup vanilla ice cream, slightly softened
- ½ cup brown sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon orange zest
Topping:
- 2 cups whipping cream
- ¼ cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
Instructions
- Peel sweet potatoes and place in a large pot. Fill pot with enough water to cover potatoes. Bring water to a boil, then reduce heat to medium and simmer until potatoes are soft.
- Transfer potatoes to a large bowl. Mash them with a fork and set aside to cool completely. This should yield about 2 cups mashed sweet potatoes.
- Preheat oven to 350 degrees. In a large bowl, combine the graham cracker crumbs, butter, sugar and cinnamon. Stir until well combined. Press mixture into the bottom of a pie pan and bake for 10 minutes. Set aside to cool.
- In a food processor or blender, combine 2 cups mashed and cooled sweet potatoes, cream cheese, ice cream, brown sugar, pumpkin pie spice and orange zest. Puree until combined and very creamy. Scoop mixture into the cooled pie crust. Cover pie and freeze for 2 to 3 hours.
- Meanwhile, prepare the topping. In a large bowl, use a hand or stand mixer to beat cream until soft peaks form. Add the sugar, vanilla and orange zest and continue beating until stiff peaks form.
- Spread or dollop whipped cream evenly over the pie before serving.
