Teriyaki Steak and Sweet Potato Skewers

Fire up the grill for these Teriyaki Steak and Sweet Potato Skewers. Marinated sirloin steak pairs perfectly with grilled sweet potatoes, mushrooms and bell peppers in this quick and easy recipe.

Ingredients

Marinade:

  • ½ cup low-sodium soy sauce
  • ¼ cup olive oil
  • ¼ cup rice vinegar
  • ¼ cup honey
  • ¾ cup light brown sugar
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, peeled and minced
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper

Skewers:

  • 1 pound sweet potatoes, peeled and chopped into 1-inch cubes
  • 2 pounds sirloin steak, trimmed and cut into 1-inch cubes
  • 5-6 white mushrooms, cleaned and halved
  • 1 yellow bell pepper, seeded and diced
  • 2-3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For serving:

  • 1 bunch green onions, diced
  • 1 tablespoon sesame seeds

Instructions

  1. In a medium saucepan, whisk together all marinade ingredients. Bring to a boil over medium heat, then remove from heat and set aside to cool.
  2. Meanwhile, bring a pot of lightly salted water to a boil. Add sweet potatoes, reduce heat to medium and cook until sweet potatoes are slightly tender, about 7 to 8 minutes. Drain water and rinse potatoes under cool water to stop the cooking. 
  3. Place sweet potatoes and steak in separate food storage containers. Pour half the marinade mixture into each container and toss to coat. Close containers and place in the refrigerator for at least 2 hours.
  4. Preheat grill to high. In a medium bowl, toss together the remaining skewer ingredients to combine.
  5. Assemble the skewers, alternating between steak, sweet potatoes and vegetables. Discard the steak marinade but reserve the marinade from the sweet potatoes.
  6. Grill skewers for 2 to 3 minutes per side until steak and vegetables are seared.
  7. Transfer to a serving platter and drizzle reserved marinade over skewers to finish. Garnish with green onions and sesame seeds. Serve immediately.
