Tortellini Soup with Italian Sausage
Take the chill out of winter with a savory Tortellini Soup with Italian Sausage loaded with cheese tortellini, crumbled sausage, carrots and red bell peppers. Toss everything into a large pot and simmer in a fire-roasted-tomato-based broth. Ladle into soup bowls and serve topped with Parmesan and fresh basil.

Ingredients
- 1 pound bulk Italian sausage
- 1 medium sweet onion, chopped
- 1 small red bell pepper, chopped
- 1 medium carrot, diced
- 3 garlic cloves, minced
- 7 cups unsalted chicken stock, divided
- 28 ounces fire-roasted diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 9 ounces (1 package) refrigerated cheese tortellini
- 2 cups baby spinach, stems removed
- ¼ cup Parmesan cheese, grated (optional)
- ¼ cup fresh basil, chopped (optional)
Instructions
- In a large pot, cook the sausage over medium-high heat, stirring occasionally, until sausage is crumbled and no longer pink, about 5 minutes. Use a slotted spoon to transfer sausage to a paper towel-lined plate. Drain grease, reserving 1 tablespoon of the drippings in the pot.
- Add the onion, pepper and carrot to the pot and saute, stirring occasionally, until tender, about 5 minutes. Add the garlic and cook for 1 minute.
- Stir in 5 cups of the broth, tomatoes, oregano, salt and pepper. Bring to a boil and add the tortellini. Reduce the heat to a simmer and cook for 5 minutes, or until tortellini is cooked through.
- Add the sausage back to the pot. Stir in the spinach and remaining 2 cups of stock. Cook for 5 minutes or until spinach wilts.
- Ladle soup into serving bowls and top each serving with Parmesan cheese and basil, if desired.
