Ingredients
- 1 cup (2 sticks) butter, softened
- 2 ½ cups flour
- ½ cup plus 2 tablespoons sugar
- 1 ½ cups white chocolate chips
- 2 tablespoons vegetable oil
- ½ cups dried cranberries, chopped
- ½ cup pistachios, finely chopped
Instructions
- Preheat oven to 300 degrees and line an 8-by-8 inch baking dish with parchment paper.
- In a large bowl, combine the butter, flour and sugar. Mix together until a stiff dough forms. Press dough into the prepared baking dish. Bake for 30 minutes, then transfer to a cooling rack until cool enough to handle.
- Turn shortbread out onto a cutting board and slice into 16 rectangular bars. Transfer bars to a parchment paper-lined baking sheet and return to the oven for an additional 10 to 15 minutes, or until light golden. Allow to cool completely.
- In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave on high in 30-second increments, stirring between each, until chocolate is melted and completely smooth.
- Dip each shortbread bar into the melted chocolate, then sprinkle with cranberries and pistachios.
- Allow chocolate to set completely before serving.
