White Chocolate-Dipped Shortbread Bars

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 2 ½ cups flour
  • ½ cup plus 2 tablespoons sugar
  • 1 ½ cups white chocolate chips
  • 2 tablespoons vegetable oil
  • ½ cups dried cranberries, chopped
  • ½ cup pistachios, finely chopped

Instructions

  1. Preheat oven to 300 degrees and line an 8-by-8 inch baking dish with parchment paper.  
  2. In a large bowl, combine the butter, flour and sugar. Mix together until a stiff dough forms. Press dough into the prepared baking dish. Bake for 30 minutes, then transfer to a cooling rack until cool enough to handle.
  3. Turn shortbread out onto a cutting board and slice into 16 rectangular bars. Transfer bars to a parchment paper-lined baking sheet and return to the oven for an additional 10 to 15 minutes, or until light golden. Allow to cool completely.  
  4. In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave on high in 30-second increments, stirring between each, until chocolate is melted and completely smooth.
  5. Dip each shortbread bar into the melted chocolate, then sprinkle with cranberries and pistachios. 
  6. Allow chocolate to set completely before serving.
