Shoulder

Shoulder/Butt Roast

Cut from the shoulder area of the pig, the pork shoulder, also called pork butt or “Boston Butt,” is a fairly tough, well-marbled cut.

Grill: For a shoulder of 3 to 4 pounds, barbecue over indirect medium heat, about 325 degrees, for 40 to 75 minutes per pound or until tender.

Roast: For a shoulder of 3 to 6 pounds, roast at 275 degrees for 55 to 85 minutes or until tender.
