Apple and Brussels Sprout Slaw

Ingredients

  • ¼ cup plus 2 tablespoons avocado oil
  • ¼ cup apple cider vinegar
  • ¼ cup mayonnaise
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 1 pound Brussels sprouts, trimmed and very thinly sliced
  • 2 large Honeycrisp apples, thinly sliced and chopped
  • ½ cup raisins
  • ½ cup pistachios, chopped

Instructions

  1. In a small bowl, whisk together the oil, vinegar, mayonnaise, maple syrup or honey, lemon juice, and salt. Set aside.
  2. In a large bowl, combine the Brussels sprouts, apples, raisins and pistachios. Pour dressing over salad and toss to coat.
  3. Chill until ready to serve. Toss again just before serving.
