Apple and Brussels Sprout Slaw

Ingredients
- ¼ cup plus 2 tablespoons avocado oil
- ¼ cup apple cider vinegar
- ¼ cup mayonnaise
- 2 tablespoons maple syrup or honey
- 2 tablespoons lemon juice
- 1 teaspoon kosher salt
- 1 pound Brussels sprouts, trimmed and very thinly sliced
- 2 large Honeycrisp apples, thinly sliced and chopped
- ½ cup raisins
- ½ cup pistachios, chopped
Instructions
- In a small bowl, whisk together the oil, vinegar, mayonnaise, maple syrup or honey, lemon juice, and salt. Set aside.
- In a large bowl, combine the Brussels sprouts, apples, raisins and pistachios. Pour dressing over salad and toss to coat.
- Chill until ready to serve. Toss again just before serving.
