Apple Cranberry Salad

Made with toasted walnuts, tart dried cranberries and tangy goat cheese, this Apple Cranberry Salad combines some of the best flavors of the season. Toss this easy recipe together in just 15 minutes for a quick lunch, dinner party starter or beautiful addition to your Thanksgiving table.

Ingredients

Salad:

  • ¼ cup walnuts, chopped
  • 5 ounces spring greens
  • 1 apple, chopped
  • ¼ cup dried cranberries
  • ⅓ cup goat cheese, crumbled

Dressing:

  • ¼ cup extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • Dash black pepper

Instructions

  1. In a medium skillet, toast the walnuts over medium heat, stirring frequently until fragrant. Transfer to a small bowl to cool.
  2. In a medium bowl, combine all dressing ingredients and whisk to combine. Set aside.
  3. In a large bowl, toss the spring greens with the apple, cranberries, goat cheese and toasted walnuts. 
  4. Drizzle dressing over the salad and toss to combine. Adjust flavor to taste by adding more vinegar, oil, salt or pepper. Serve immediately.
