Apple Cinnamon Bread

Apple Cinnamon Bread features the classic fall pairing of tart apples with cinnamon and nutmeg. Whip up a loaf or two on the weekend and enjoy ready-to-eat breakfasts or snacks all week long.

Ingredients

  • 4 small or 2 large tart apples, cut into ¼-inch chunks
  • 1 ½ cups sugar
  • ½ teaspoon lemon zest
  • ¼ teaspoon lemon juice
  • 1 ½ cups all-purpose flour
  • ½ cup white whole-wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the apples, sugar, and lemon zest and juice. Stir together to combine and allow mixture to sit for about 30 minutes, stirring occasionally.
  2. Preheat oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  3. In a large bowl, combine both flours, baking soda, cinnamon, nutmeg and salt.
  4. In a separate bowl, whisk together the oil, eggs and vanilla.
  5. Fold the flour mixture into the apple mixture until just combined. Add the oil mixture and stir until just combined. The batter will not be smooth.
  6. Pour batter into the prepared pan and bake for 55 to 60 minutes, or until the top springs back when pressed.
  7. Allow to cool for about 10 minutes, then invert the loaf pan to remove the bread. Serve warm or at room temperature.
