Apple Cinnamon Bread

Ingredients
- 4 small or 2 large tart apples, cut into ¼-inch chunks
- 1 ½ cups sugar
- ½ teaspoon lemon zest
- ¼ teaspoon lemon juice
- 1 ½ cups all-purpose flour
- ½ cup white whole-wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon salt
- ½ cup avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the apples, sugar, and lemon zest and juice. Stir together to combine and allow mixture to sit for about 30 minutes, stirring occasionally.
- Preheat oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
- In a large bowl, combine both flours, baking soda, cinnamon, nutmeg and salt.
- In a separate bowl, whisk together the oil, eggs and vanilla.
- Fold the flour mixture into the apple mixture until just combined. Add the oil mixture and stir until just combined. The batter will not be smooth.
- Pour batter into the prepared pan and bake for 55 to 60 minutes, or until the top springs back when pressed.
- Allow to cool for about 10 minutes, then invert the loaf pan to remove the bread. Serve warm or at room temperature.
