Avocado Chocolate Truffles

Ingredients
Truffles:
- 3⁄4 cups heavy cream
- 9 ounces dark chocolate
- 1⁄2 cup Florida avocado, smashed
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon sea salt
Optional toppings:
- Cocoa powder
- Shredded coconut
- Strawberry powder
- Pistachios, chopped
Instructions
- Place the dark chocolate in a large bowl. Heat the heavy cream on the stove or in the microwave and pour over chocolate. Let sit for about 5 minutes, then whisk to combine the melted chocolate and cream.
- Add the chocolate mixture to a blender or food processor along with the smashed avocado, vanilla and salt and blend until smooth.
- Place the mixture in a shallow bowl and chill uncovered for approximately 3 hours or until mixture has set but it still soft and scoopable.
- Scoop about a tablespoon of the chocolate truffle mixture and roll into a ball. Try not to handle for too long, as it can melt. Repeat with remaining truffle mixture. Eat as is or roll the truffles in your favorite topping. Store in an airtight container in the refrigerator.
