Ingredients

  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 2 teaspoons black pepper
  • 2 teaspoons sea salt
  • 2 pounds lamb loin chops
  • 1 tablespoon olive oil

Balsamic Glaze:

  • ¾ cup balsamic vinegar
  • ¼ cup brown sugar
  • 2 tablespoons butter
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. In a small bowl, combine the garlic, red pepper flakes, black pepper and salt. Rub the mixture on both sides of the lamb chops and let sit at room temperature for 30 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the lamb chops for about 3 to 4 minutes on each side. Remove from the skillet and set aside.
  3. Add balsamic vinegar to the skillet and use a wooden spoon to scrape up the brown bits. Add brown sugar and simmer for about 5 minutes, or until the mixture starts to thicken.
  4. Add the butter and rosemary and return the lamb chops to the skillet. Cook while spooning the glaze onto the chops and flipping them periodically for 6 to 8 minutes, or until the chops reach desired doneness and the glaze is thickened. Serve immediately.
