Beer Cheese Dip with Soft Pretzel Bites

Ingredients
- ¼ cup butter
- ¼ cup all-purpose flour
- 1 cup lager
- ½ cup half and half
- 4 ounces yellow sharp cheddar cheese, shredded
- 4 ounces American cheese, shredded
- 2 teaspoons Dijon mustard
- ½ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- Green onions, chopped (for topping)
For Serving:
- 24 ounces (2 packages) soft pretzel bites, prepared according to package instructions
- 4 cups vegetables of choice (celery, broccoli, bell peppers, carrots, etc.)
Instructions
- In a saucepan over medium heat, melt the butter. Add the flour and whisk constantly while cooking for 1 to 2 minutes, or until golden brown. Add the lager and half and half and continue cooking while whisking constantly until the mixture begins to thicken and no lumps remain.
- Add both cheeses, mustard, cayenne, garlic powder and salt, and continue whisking until the cheese is melted and the mixture is smooth. Remove from heat and let cool slightly.
- Transfer dip to a serving bowl and top with green onions. Serve with soft pretzel bites and vegetables of choice.
