Beer Cheese Dip with Soft Pretzel Bites

Ingredients

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 cup lager
  • ½ cup half and half
  • 4 ounces yellow sharp cheddar cheese, shredded
  • 4 ounces American cheese, shredded
  • 2 teaspoons Dijon mustard
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • Green onions, chopped (for topping)

For Serving:

  • 24 ounces (2 packages) soft pretzel bites, prepared according to package instructions
  • 4 cups vegetables of choice (celery, broccoli, bell peppers, carrots, etc.)

Instructions

  1. In a saucepan over medium heat, melt the butter. Add the flour and whisk constantly while cooking for 1 to 2 minutes, or until golden brown. Add the lager and half and half and continue cooking while whisking constantly until the mixture begins to thicken and no lumps remain.
  2. Add both cheeses, mustard, cayenne, garlic powder and salt, and continue whisking until the cheese is melted and the mixture is smooth. Remove from heat and let cool slightly.
  3. Transfer dip to a serving bowl and top with green onions. Serve with soft pretzel bites and vegetables of choice.
