Blackened Grouper Po’boys
A classic Southern sandwich gets a new twist in these Blackened Grouper Po’boys. Load up hoagie rolls with blackened grouper, homemade lemon caper dressing and all the fixings for a quick, easy and delicious meal.

Ingredients
For the Seasoning:
- 1 tablespoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon granulated garlic
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon cayenne pepper
For the Lemon Caper Dressing:
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- ¼ teaspoon mustard powder
- ¼ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 1 tablespoon capers
For the Po’boys:
- 12 ounces grouper (about 2 fillets)
- 2 tablespoons olive oil, divided
- 2 French bread or hoagie rolls
- ½ head iceberg lettuce, shredded
- 1-2 tomatoes, sliced
- Lemon wedges, for serving (optional)
Instructions
- In a small bowl, whisk together all seasoning ingredients. Set aside.
- In a separate small bowl, whisk together all dressing ingredients. Set aside.
- Heat a cast-iron skillet over medium-high heat. Rinse grouper fillets under cold water, then pat dry with paper towels. Rub 1 tablespoon oil over both sides of each fillet, then coat liberally with the blackening seasoning. Place fillets into the hot skillet and cook about 3 minutes on each side, or until grouper is cooked through and flaky.
- Preheat the broiler to high and slice the French bread or hoagie rolls in half. Drizzle the open rolls with the remaining tablespoon of oil and toast in the oven until just golden, about 1 minute.
- To assemble the po’boys, spread the dressing onto the toasted bread. To one side of each roll, add a grouper fillet, shredded lettuce, sliced tomatoes and more lemon caper dressing as desired. Add a squeeze of fresh lemon, if desired, top with the other half of the roll and serve immediately.
