Ingredients
For the Crab:
- 1½ pounds fresh, unshelled blue crabs (about 8 ounces crab meat)
- 1 tablespoon salt
For the Wonton Crackers:
- 8 ounces wonton wrappers
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 ½ teaspoons sesame seeds
For the Rangoon Dip:
- 12 ounces cream cheese, room temperature
- ½ cup sour cream
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 1 tablespoon chili garlic or Sriracha sauce
- ½ teaspoon sesame oil
- ½ teaspoon salt
- 3 tablespoons green onion, diced, divided
- ½ teaspoon sesame seeds
Instructions
- For the crab: Fill a large pot about halfway with water. Add salt and bring to a boil. Add crabs and cook for 5 minutes. Remove crabs and set aside to cool. Once cool enough to handle, carefully remove the shells and place the crabmeat into a small bowl. Set aside.
- For the crackers: Preheat oven to 350 degrees. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
- Cut wonton wrappers into 2-by-2-inch squares and place in a single layer on the prepared baking sheet. Brush each square with oil and sprinkle each with a pinch of salt and sesame seeds. Bake for 10 to 12 minutes, or until golden brown. (You may need to bake them in a few batches until all wonton wrappers are finished.) Keep the oven on.
- For the dip: In a large bowl, use a hand or stand mixer to beat together the cream cheese, sour cream, lemon juice, soy sauce, chili garlic or Sriracha sauce, sesame oil and salt. Once smooth, add the crab meat and 2 tablespoons green onions and fold gently until just combined so the crab stays in large chunks.
- Spoon dip into a baking dish and warm in the oven for 5 minutes. Top with the remaining 1 tablespoon of green onions and sesame seeds. Serve warm alongside wonton crackers.
