Broccolini White Cheddar Soup

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 cup carrots, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups broccolini, coarsely chopped
- 32 ounces (1 carton) chicken stock
- 2 cups milk
- 1 teaspoon salt
- 8 ounces white cheddar cheese, grated
- Shredded white cheddar cheese, for topping (optional)
Instructions
- In a large pot, warm oil over medium heat. Add the onion, carrots, garlic and mushrooms and saute until softened, about 10 minutes.
- Add broccolini, chicken stock, milk and salt. Bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes, or until broccolini is tender.
- Remove soup from heat. Carefully transfer soup to a blender (or use an immersion blender) and blend until very creamy. Return soup to pot and stir in the grated cheddar until completely melted.
- Ladle soup into serving bowls and top each serving with shredded cheddar, if desired.
