Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, shredded
  • 2 stalks celery, chopped
  • 64 ounces (2 cartons) chicken stock
  • 1 ½ cups quinoa, uncooked
  • 3 cups cooked chicken, cut into bite-sized pieces
  • 2 cups Brussels sprouts, trimmed and sliced
  • 3 tablespoons butter
  • ½ teaspoon black pepper, plus more to taste
  • Salt, to taste
  • ½ cup fresh parsley, minced (optional)

Instructions

  1. In a large pot, warm oil over medium heat. Add the onion, carrots and celery and saute until soft, about 7 to 10 minutes.
  2. Add the chicken stock and quinoa. Bring to a boil, then reduce heat to a simmer. Simmer while stirring occasionally until quinoa is softened, about 15 minutes. 
  3. Add the chicken, Brussels spouts, butter and pepper. Continue simmering for 10 minutes, or until sprouts are softened. Season with salt and pepper to taste.
  4. Ladle soup into serving bowls and garnish each serving with fresh parsley, if desired.
