Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 medium carrots, shredded
- 2 stalks celery, chopped
- 64 ounces (2 cartons) chicken stock
- 1 ½ cups quinoa, uncooked
- 3 cups cooked chicken, cut into bite-sized pieces
- 2 cups Brussels sprouts, trimmed and sliced
- 3 tablespoons butter
- ½ teaspoon black pepper, plus more to taste
- Salt, to taste
- ½ cup fresh parsley, minced (optional)
Instructions
- In a large pot, warm oil over medium heat. Add the onion, carrots and celery and saute until soft, about 7 to 10 minutes.
- Add the chicken stock and quinoa. Bring to a boil, then reduce heat to a simmer. Simmer while stirring occasionally until quinoa is softened, about 15 minutes.
- Add the chicken, Brussels spouts, butter and pepper. Continue simmering for 10 minutes, or until sprouts are softened. Season with salt and pepper to taste.
- Ladle soup into serving bowls and garnish each serving with fresh parsley, if desired.
