Campfire S’mores Pie

Ingredients
For the Crust:
- 1 sleeve graham crackers (1 ¼ cup crumbs)
- 6 tablespoons butter, melted
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
For the Filling:
- 1 cup semisweet chocolate chips
- 2 tablespoons olive oil
- ¼ teaspoon salt
- 7 ounces (1 jar) marshmallow creme
- 1 ½ cups mini marshmallows
Instructions
- Preheat oven to 350 degrees.
- For the crust: In a food processor, pulse graham crackers into fine crumbs. Transfer crumbs to a medium bowl and add the melted butter, both sugars, cinnamon and salt. Mix to combine, then press into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then set aside to cool.
- For the filling: In a microwave-safe bowl, combine the chocolate chips, oil and salt. Microwave on high for 1 minute, stopping to stir halfway through, until chocolate is completely melted and smooth. Set aside to cool.
- Pour about ¾ of the melted chocolate into the cooled pie crust. Spread it around the bottom and up the sides with a spoon. Refrigerate for 10 to 15 minutes, or until the chocolate has set.
- Place oven rack on the top third of the oven and preheat broiler to high.
- Pour marshmallow creme over the chocolate layer in the crust and spread across the bottom in an even layer. Top with marshmallows. Broil pie for 1 to 2 minutes, or until the marshmallows turn golden-brown on top. Set aside to cool completely.
- Drizzle the remaining melted chocolate over the top of the pie and refrigerate at least 30 minutes, or until ready to serve.
Tips & Notes
A butane cooking torch works even better than the oven broiler to toast the marshmallows. If you have one, skip the broiling step and torch the marshmallows until golden-brown.
