Campfire S’mores Pie

Ingredients

For the Crust:

  • 1 sleeve graham crackers (1 ¼ cup crumbs)
  • 6 tablespoons butter, melted
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar 
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

For the Filling:

  • 1 cup semisweet chocolate chips
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 7 ounces (1 jar) marshmallow creme
  • 1 ½ cups mini marshmallows

Instructions

  1. Preheat oven to 350 degrees. 
  2. For the crust: In a food processor, pulse graham crackers into fine crumbs. Transfer crumbs to a medium bowl and add the melted butter, both sugars, cinnamon and salt. Mix to combine, then press into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then set aside to cool.
  3. For the filling: In a microwave-safe bowl, combine the chocolate chips, oil and salt. Microwave on high for 1 minute, stopping to stir halfway through, until chocolate is completely melted and smooth. Set aside to cool.
  4. Pour about ¾ of the melted chocolate into the cooled pie crust. Spread it around the bottom and up the sides with a spoon. Refrigerate for 10 to 15 minutes, or until the chocolate has set.
  5. Place oven rack on the top third of the oven and preheat broiler to high.
  6. Pour marshmallow creme over the chocolate layer in the crust and spread across the bottom in an even layer. Top with marshmallows. Broil pie for 1 to 2 minutes, or until the marshmallows turn golden-brown on top. Set aside to cool completely.
  7. Drizzle the remaining melted chocolate over the top of the pie and refrigerate at least 30 minutes, or until ready to serve.

Tips & Notes

A butane cooking torch works even better than the oven broiler to toast the marshmallows. If you have one, skip the broiling step and torch the marshmallows until golden-brown.
