Caramel Apple Cupcakes
Surprise your Halloween guests with Caramel Apple Cupcakes that look and taste like real caramel apples. Fold chopped tart apples into spice cake batter, bake into cupcakes, then spread melted caramels over the top and sprinkle with chopped pecans. Insert a wooden skewer into each to complete the caramel apple look.

Ingredients
- 12 jumbo cupcake liners
- 1 package (15.25 ounces) spice cake mix, plus ingredients required to prepare batter as indicated on package
- 2 medium Granny Smith apples, peeled, cored and chopped (about 2 cups)
- 40 baking caramels, unwrapped
- ¼ cup 2% milk
- 1 cup pecans, chopped
- 12 wooden skewers or popsicle sticks
Instructions
- Preheat oven to 350 degrees and line a jumbo muffin pan with 12 liners.
- Prepare cake batter according to package directions, then fold the chopped apples into the batter.
- Fill cupcake liners about ¾ of the way full with batter. Bake cupcakes for about 20 minutes, or until a toothpick inserted into the center of one comes out clean.
- Set cupcakes aside to cool in the pan for about 10 minutes, then remove from the pan (not the liners) and allow to cool completely on a wire rack.
- While cupcakes are cooling, prepare the caramel topping. In a small saucepan, warm the caramels and milk over low heat, stirring constantly, until caramels are completely melted and smooth.
- Spread about 2 tablespoons of caramel topping over each cooled cupcake. Sprinkle chopped pecans over the tops and insert a wooden skewer or popsicle stick in each before serving.
Tips & Notes
Not a fan of nuts? Substitute festive Halloween sprinkles for the chopped pecans.
