Chicken and Sweet Potato Bowls with Tahini Sauce

Made with roasted chickpeas, quinoa and fresh vegetables, these colorful Chicken and Sweet Potato Bowls with Tahini Sauce are packed with protein for a complete, one-bowl meal that’s both healthy and filling.

Ingredients

  • 2 pounds sweet potatoes, cut into 1- to 2-inch cubes
  • 15 ounces (1 can) chickpeas, drained and patted dry
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt

Tahini Sauce:

  • ¼ cup tahini
  • 3 tablespoons lemon juice
  • 2 tablespoons warm water
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • 1 clove garlic, minced
  • 1 teaspoon salt

Chicken Bowl:

  • 4 cups arugula
  • 2 cups cooked chicken, shredded
  • 2 cups cooked quinoa
  • 1 red bell pepper, chopped
  • 1 avocado, diced

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. Place cubed sweet potatoes and chickpeas on baking sheet and toss with oil, garlic powder, cumin and salt until evenly coated. Roast for 35 minutes, or until potatoes are tender and chickpeas are slightly crispy.
  3. In a food processor or blender, combine all sauce ingredients and blend until smooth. If sauce is too thick, add more warm water 1 tablespoon at a time until sauce reaches desired consistency. Set aside.
  4. To assemble, divide the arugula, chicken, quinoa, bell peppers and avocado slices evenly between 4 serving bowls.
  5. Top each serving with sweet potato and chickpea mixture and drizzle with desired amount of sauce. Serve immediately.

  1. Sounds perfect and Delicious ! What can I substitute Sweet Potatoes with? I don’t like them at all.
