Hasselback Sweet Potatoes

You may have tried Hasselback potatoes, but Hasselback Sweet Potatoes brushed in garlic butter and sprinkled with Parmesan cheese take the classic dish to a new level.

Ingredients

  • 4 small or medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 3 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon Parmesan cheese, grated
  • Fresh chives, chopped (optional)

Instructions

  1. Preheat oven to 425 degrees.
  2. Make a series of ⅛-inch slices along one side of each sweet potato, being careful to cut only ⅔ of the way through.
  3. Brush potatoes with oil and sprinkle with ½ teaspoon salt. Use your hands to rub the salt into each potato. Place potatoes on a baking sheet and roast for 40 minutes.
  4. Meanwhile, in a small bowl, combine the butter, garlic and remaining ½ teaspoon salt. Stir to thoroughly combine.
  5. Remove potatoes from the oven and use a fork to accordion out the slices. Brush the butter mixture over each potato and between all the slices. Return potatoes to the oven to roast for an additional 10 minutes, or until tender. 
  6. Garnish each potato with Parmesan cheese and chives before serving, if desired.

  1. These were so delicious! Smaller sweet potatoes did better, and my favorite part was the brown butter crispy bottoms of the potatoes. YUM! My new way to enjoy sweet potatoes for sure.
