Cocoa-Rubbed Strip Steaks with Bacon-Bourbon Gravy

Ingredients

Steak:

  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons paprika
  • 1 teaspoon brown sugar
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons salt
  • 3 New York strip steaks (each about 1 pound 1 ½ inches thick)
  • 1 tablespoon unsalted butter

Gravy:

  • 4 strips bacon, diced
  • 1 medium leek (white and light green parts only), finely chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ½ cup bourbon
  • 3 cups unsalted beef broth
  • ½ cup low-fat buttermilk
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a small bowl whisk together the cocoa powder, paprika, brown sugar, cayenne and 2 teaspoons salt. Massage the rub onto both sides of each steak and let sit at room temperature for 30 minutes.
  2. Meanwhile, prepare the gravy. Heat a large saucepan over medium heat. Add the bacon and cook until crisp, about 5 minutes. Transfer to a paper towel-lined plate and set aside.
  3. Add the chopped leek to the pan with the bacon drippings and cook until soft, about 3 minutes. Add 2 tablespoons butter. Once melted, add the flour and cook while whisking for about 1 minute.
  4. Whisk in the bourbon and bring mixture to a simmer. Cook, stirring occasionally, until slightly thickened, about 2 minutes. Add broth and bring to a boil over high heat. Cook until the mixture is reduced by a quarter, about 8 minutes. Reduce heat to medium and whisk in the buttermilk. Simmer while stirring until the gravy coats the back of the spoon, about 10 minutes. Stir in the reserved bacon and season with salt and pepper if using. Keep warm.
  5. Heat a large cast-iron skillet over high heat. Melt 1 tablespoon butter, then add the steak and sear until a dark crust forms, about 7 minutes per side. Transfer steaks to a cutting board and let rest 5 minutes. Slice steak and serve with gravy.
