Creamy Waldorf Salad

Celebrate apple season with a trip to a local orchard to pick your own crisp apples fresh from the trees. Then prepare a Creamy Waldorf Salad. This lightened-up take on a classic still includes walnuts, celery and grapes, but the salad base consists of healthy fat-free Greek yogurt. In the mood for a sweet-tart taste? Use Granny Smith apples or toss in dried cranberries.

Ingredients

  • 2 large, unpeeled Red Delicious apples, cored and cut into ½-inch pieces
  • 2 tablespoons fresh lemon juice
  • 1 cup celery, diced
  • 1 cup red seedless grapes, halved
  • 1 cup walnuts, chopped
  • ¾ cup plain, low-fat Greek yogurt
  • 8 Boston lettuce leaves

Instructions

  1. Place the chopped apples in a large bowl and toss with lemon juice.
  2. Add the celery, grapes, walnuts and yogurt. Stir until everything is well combined. Cover and refrigerate until ready to serve (up to overnight).
  3. Scoop the salad onto Boston lettuce leaves to serve.

Tips & Notes

To enhance the walnut flavor, toast the walnuts first. Preheat oven to 350 degrees, arrange walnuts in a single layer on a cookie sheet, and bake for 8 to 10 minutes, stirring occasionally. Remove once golden brown.
