Fresh Romaine with Greek Yogurt Caesar Dressing

Fresh Romaine with Greek Yogurt Caesar Dressing makes the perfect summer salad. Transform classic Caesar dressing into a light and creamy version using Greek yogurt. Toss it with fresh romaine lettuce, shredded Parmesan and crunchy croutons.

Ingredients

  • ½ cup nonfat plain Greek yogurt 
  • ½ cup Parmesan cheese, grated
  • 3 tablespoons 1% milk
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons anchovy paste
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, pressed or minced
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons lemon juice
  • 1 large head romaine lettuce, torn into bite-size pieces
  • ½ cup Parmesan cheese, shaved
  • 1 cup Caesar-style croutons

Instructions

  1. In a large liquid measuring cup, whisk together the yogurt, grated Parmesan, milk, oil, anchovy paste, Worcestershire sauce, garlic, mustard, salt, pepper and lemon juice until combined and smooth. 
  2. In a large salad bowl, combine the romaine, shaved Parmesan and croutons. Pour about half the dressing over the salad and toss to combine.
  3. Serve immediately or refrigerate in a sealed container for up to 3 days.

Tips & Notes

This recipe makes 1½ cups of dressing but only uses half. Refrigerate leftovers in a sealed container for up to 3 days.
