Chopped Green Goddess Salad

Shredded cabbage and lettuce make the perfect base for a crunchy Chopped Green Goddess Salad. Add in some cucumbers, green onions, pumpkin seeds, and a bright and flavorful homemade dressing for a refreshing salad bursting with fresh flavor.

Ingredients

For the Salad:

  • 2 cups shredded cabbage or coleslaw mix
  • 2 cups green lettuce (like romaine or butter lettuce), chopped
  • 3 baby cucumbers, chopped
  • 6 green onions, chopped
  • ¼ cup pumpkin seeds 

For the Green Goddess Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • Juice of 2 lemons
  • 1 cup basil leaves
  • 1 cup spinach leaves
  • ¼ cup chives
  • 1 clove garlic
  • 1 shallot
  • 3 tablespoons walnuts
  • ¼ cup nutritional yeast
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine all salad ingredients and toss to combine. Set aside.
  2. In a food processor, combine all dressing ingredients. Blend until smooth and creamy. Adjust seasoning to taste.
  3. Pour dressing over salad and toss to coat.

Tips & Notes

You can make the salad and dressing ahead of time. Store both in the fridge and combine them just before serving.
