Chopped Green Goddess Salad
Shredded cabbage and lettuce make the perfect base for a crunchy Chopped Green Goddess Salad. Add in some cucumbers, green onions, pumpkin seeds, and a bright and flavorful homemade dressing for a refreshing salad bursting with fresh flavor.

Ingredients
For the Salad:
- 2 cups shredded cabbage or coleslaw mix
- 2 cups green lettuce (like romaine or butter lettuce), chopped
- 3 baby cucumbers, chopped
- 6 green onions, chopped
- ¼ cup pumpkin seeds
For the Green Goddess Dressing:
- ¼ cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- Juice of 2 lemons
- 1 cup basil leaves
- 1 cup spinach leaves
- ¼ cup chives
- 1 clove garlic
- 1 shallot
- 3 tablespoons walnuts
- ¼ cup nutritional yeast
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine all salad ingredients and toss to combine. Set aside.
- In a food processor, combine all dressing ingredients. Blend until smooth and creamy. Adjust seasoning to taste.
- Pour dressing over salad and toss to coat.
Tips & Notes
You can make the salad and dressing ahead of time. Store both in the fridge and combine them just before serving.
