Maple-Mustard Glazed Pork Chops

Ingredients

  • 4 bone-in, center-cut pork chops (about 6 ounces each)
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • ½ small white onion, chopped
  • ¼ cup fat-free, low-sodium chicken broth
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup

Instructions

  1. Sprinkle pork chops with salt and pepper on both sides.
  2. Heat oil in a large skillet over medium-high heat until sizzling. Add pork chops and cook 3 to 4 minutes on each side, or until cooked through but slightly pink in the center. Transfer pork chops to a platter without draining the pan.
  3. Return pan to medium-high heat. Add the onion and saute for 3 minutes, or until tender. 
  4. Add the broth, bring to a boil and cook for 1 minute. Stir in the mustard and maple syrup. Continue cooking for 1 minute, or until slightly thickened. 
  5. Return the pork chops to the pan and cook for 1 minute on each side, or until thoroughly heated through (be careful not to overcook).
  6. Serve pork chops warm with sauce.
