Fresh Roma tomatoes star in this healthy Marinated Tomato Salad. Combined with red onion, mozzarella and a simple vinaigrette, this 15-minute salad is perfect for busy days when you need to whip up a quick lunch or side dish in a pinch.

Ingredients
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon sugar (optional)
- 1 ½ pounds Roma tomatoes, quartered
- ½ cup red onion, thinly sliced
- 8 ounces mozzarella cheese pearls
Instructions
- In a large bowl, whisk together the oil, vinegar, garlic, oregano, salt and sugar, if using.
- Add the tomatoes and onion and toss together with the marinade. Let mixture marinate at room temperature for 30 minutes.
- Add the mozzarella pearls and toss to combine.
- Serve immediately or store in an airtight container in the refrigerator.
Tips & Notes
As the salad sits, the tomatoes release juice. Strain out excess liquid before serving if desired.
