Marinated Tomato Salad

Fresh Roma tomatoes star in this healthy Marinated Tomato Salad. Combined with red onion, mozzarella and a simple vinaigrette, this 15-minute salad is perfect for busy days when you need to whip up a quick lunch or side dish in a pinch.

Ingredients

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional)
  • 1 ½ pounds Roma tomatoes, quartered
  • ½ cup red onion, thinly sliced
  • 8 ounces mozzarella cheese pearls

Instructions

  1. In a large bowl, whisk together the oil, vinegar, garlic, oregano, salt and sugar, if using.
  2. Add the tomatoes and onion and toss together with the marinade. Let mixture marinate at room temperature for 30 minutes.
  3. Add the mozzarella pearls and toss to combine.
  4. Serve immediately or store in an airtight container in the refrigerator.

Tips & Notes

As the salad sits, the tomatoes release juice. Strain out excess liquid before serving if desired.
