Stuffed Cherry Tomatoes

Stuffed Cherry Tomatoes make a tasty bite-size snack to serve at any get-together. Filled with whipped feta and cream cheese, this no-cook recipe takes just 25 minutes to prepare.

Ingredients

  • 12 ounces cherry tomatoes (about 30 tomatoes)
  • 4 ounces cream cheese, softened
  • ½ cup feta cheese, crumbled
  • 1 clove garlic, grated
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh basil, chopped
  • ½ teaspoon salt

Instructions

  1. Slice 1 rounded end off each tomato and use a spoon to scoop out seeds.
  2. In a large bowl using a hand or stand mixer, mix the cream cheese and feta until combined. Add garlic, lemon juice, basil, and salt and mix until light and fluffy.
  3. Transfer the cheese mixture to a piping bag and fill each cherry tomato.
  4. Serve immediately or store in the refrigerator until ready to serve. Tomatoes are best when eaten the day they are made.
