Peanut-Crusted Chicken Tenders

Ingredients
Marinade:
- ¾ cup buttermilk
- 1 teaspoon ground mustard
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 pound chicken tenders
Peanut Crust Batter:
- 1 cup roasted lightly salted peanuts
- ¾ cup all-purpose flour
- ½ teaspoon smoked paprika
- ½ teaspoon granulated garlic
- ½ teaspoon salt
- 1 egg
- 1 tablespoon water
- 2 cups canola oil, for frying
- Ketchup, ranch dressing or desired dipping sauces, for serving (optional)
Instructions
- In a medium bowl, prepare the marinade by whisking together the buttermilk, ground mustard, paprika and salt. Add chicken to the bowl and marinate at room temperature for 30 minutes.
- Meanwhile, prepare the peanut crust batter. In a food processor or blender, combine the peanuts, flour, paprika, garlic and salt. Blend until peanuts are coarsely chopped. Place mixture in a large shallow dish or pan.
- In a separate shallow dish, whisk egg and water to combine.
- When chicken has finished marinating, remove 1 tender at a time, allowing excess marinade to drip off. Dip tender in peanut mixture, then in egg mixture, then back into peanut mixture again to coat. Place on a plate and repeat with remaining tenders. You may need to press some of the batter into the tenders.
- After all tenders are battered, add 2 cups of oil to a heavy-bottomed pot. Heat the oil over medium-high until it reaches around 350 degrees. Fry the tenders in small batches for about 2 minutes per side, then place on a cooling rack to drain excess oil. If necessary, add more oil while cooking. Repeat until all tenders are cooked.
- Serve warm alongside ketchup or other dipping sauce, if desired.
