Peppermint Fudge Pie

Ingredients

  • 1 unbaked pie crust (homemade or store-bought)
  • ¾ cup butter, melted
  • 1 ½ cups plus 2 tablespoons sugar, divided
  • 3 eggs
  • 1 ¼ teaspoon peppermint extract, divided
  • ⅓ cup all-purpose flour
  • ⅓ cup cocoa powder
  • ½ teaspoon salt
  • 1 cup whipping cream
  • 2 drops red food coloring
  • Crushed peppermint candies, for garnish

Instructions

  1. Preheat oven to 350 degrees. Place pie crust into a glass pie dish. Trim and crimp edges. Set aside.
  2. In a medium bowl, whisk together the melted butter, 1 ½ cups sugar, eggs and 1 teaspoon peppermint extract until well combined. Add the flour, cocoa powder and salt, and whisk again to combine. 
  3. Pour into prepared pie crust and bake for 35 minutes. Remove from oven and set aside to cool completely.
  4. Meanwhile, in a large bowl, use a hand or stand mixer to beat cream until soft peaks form. Add remaining 2 tablespoons sugar, ¼ teaspoon peppermint extract and food coloring, and beat again until stiff peaks form.
  5. Just before serving, spread whipped cream over the cooled pie and sprinkle crushed peppermint candies over the top.
