Peppermint Fudge Pie

Ingredients
- 1 unbaked pie crust (homemade or store-bought)
- ¾ cup butter, melted
- 1 ½ cups plus 2 tablespoons sugar, divided
- 3 eggs
- 1 ¼ teaspoon peppermint extract, divided
- ⅓ cup all-purpose flour
- ⅓ cup cocoa powder
- ½ teaspoon salt
- 1 cup whipping cream
- 2 drops red food coloring
- Crushed peppermint candies, for garnish
Instructions
- Preheat oven to 350 degrees. Place pie crust into a glass pie dish. Trim and crimp edges. Set aside.
- In a medium bowl, whisk together the melted butter, 1 ½ cups sugar, eggs and 1 teaspoon peppermint extract until well combined. Add the flour, cocoa powder and salt, and whisk again to combine.
- Pour into prepared pie crust and bake for 35 minutes. Remove from oven and set aside to cool completely.
- Meanwhile, in a large bowl, use a hand or stand mixer to beat cream until soft peaks form. Add remaining 2 tablespoons sugar, ¼ teaspoon peppermint extract and food coloring, and beat again until stiff peaks form.
- Just before serving, spread whipped cream over the cooled pie and sprinkle crushed peppermint candies over the top.
