Pumpkin Deviled Eggs

Traditional deviled eggs get a fall-inspired upgrade with these Pumpkin Deviled Eggs made with pumpkin puree. Decorate the yolk filling by scoring grooves on the outside, dusting with paprika and adding chopped chives to resemble pumpkins with stems.

Ingredients

  • 6 eggs
  • 4 tablespoons mayonnaise  
  • 2 tablespoons pumpkin puree
  • 2 teaspoons Dijon mustard
  • ½ teaspoon smoked paprika, plus more for dusting
  • ½ teaspoon salt
  • 3-4 fresh chives

Instructions

  1. Place eggs in a medium pot. Fill the pot with water until the eggs are covered by about 2 inches. Bring water to a boil, then cover and boil eggs for 2 minutes. Turn off heat and let eggs sit in the hot water for 10 minutes. Remove the eggs from the water and let cool completely.
  2. Peel shells off the cooled eggs and cut each in half. Scoop out the yolks and place them in a food processor or blender. Add mayonnaise, pumpkin, mustard, paprika and salt. Pulse until combined and creamy.
  3. Transfer the yolk mixture to a piping bag or a zip-close bag with a corner snipped off. Pipe the mixture into each egg white.
  4. Dust deviled eggs with paprika, then use a sharp knife to create lines down the filling mixture to resemble the grooves in a pumpkin.
  5. Chop the chives into small pieces and insert one at the top of the filling mixture on each egg to create the pumpkin stem.
  6. Enjoy immediately or store in an airtight container in the refrigerator until ready to serve.

Tips & Notes

  • Depending on the thickness of your pumpkin puree, you may need to reduce the amount of mayonnaise by about a tablespoon.
  • You can create the festive pumpkin look with any deviled egg recipe by following steps 4-6.

  1. What a unique deviled egg recipe. I’ve run across many recipes for stuffed eggs, but never with pumpkin puree. It’s a perfect appetizer for a Fall get-together.
