Rice Crispy Treat Monsters

Transform classic rice crispy treats into a Halloween-themed snack with these Rice Crispy Treat Monsters. Dipped in colored candy melts and decorated with candy eyeballs, kids will love helping out with this fun kitchen project.

Ingredients

  • 10 tablespoons unsalted butter
  • 20 ounces (2 bags) mini marshmallows
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 10 cups crispy rice cereal
  • 1 cup orange candy melts
  • 1 cup blue candy melts
  • 1 cup purple candy melts
  • 3 teaspoons canola oil
  • Candy eyeballs

Instructions

  1. Grease a 9-by-13-inch baking dish and set aside.
  2. In a large pot, melt the butter over medium-low heat. Once melted, add the marshmallows, vanilla and salt. Cook until everything is melted and combined, stirring frequently. 
  3. Remove mixture from heat and add the cereal. Stir until cereal is well coated. Press mixture into the prepared baking dish. Allow to cool completely, then cut rice crispy treats out into rectangles and set aside.
  4. Place each colored candy melt in a separate microwave-safe bowl. Microwave each bowl on 50% power until candies are completely melted. Whisk 1 teaspoon of oil into each color to thin.
  5. Dip about half a rice crispy treat into one of the candy melt colors. Use a spoon to smooth out candy coating if necessary. Decorate with candy eyeballs and place on parchment paper to set. Repeat with remaining rice crispy treats.
  6. Allow candy melt topping to set completely before serving.

Tips & Notes

The rice crispy treats can be made a day in advance before decorating.
