Quick Ham and White Bean Soup

Nothing tastes better than homemade soup. No need to spend hours in the kitchen. Take a few shortcuts with Quick Ham and White Bean Soup. Use canned Great Northern or cannellini beans and simmer them on the stovetop in chicken stock with sliced carrots, celery, onion, diced ham and savory spices.

Ingredients

  • 2 tablespoons olive oil
  • 2 large carrots, chopped
  • 2 large celery ribs, chopped
  • 1 medium yellow onion, chopped
  • 46.5 ounces (3 cans) Great Northern beans, drained and rinsed
  • 4 cups unsalted chicken stock
  • 2 cups cooked ham, cubed
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ½ teaspoon ground sage
  • ½ teaspoon black pepper
  • Parmesan cheese, for serving (optional)

Instructions

  1. In a large saucepan, warm the olive oil over medium-high heat. Add the carrots, celery and onion and saute until tender, about 5 minutes.
  2. Stir in the beans, chicken stock, ham, rosemary, thyme, sage and pepper, Bring to a boil, then reduce heat and simmer for 10 minutes. 
  3. Serve warm with a sprinkle of Parmesan cheese on top, if desired.
