Roasted Summer Vegetable Strata
Enjoy a cheesy and rich Roasted Summer Vegetable Strata as a light brunch or side dish. It makes a guaranteed hit loaded with dairy – milk, cheddar and Parmesan cheese – and paired with garden-fresh veggies such as zucchini, bell peppers, onions and tomatoes.

Ingredients
- 3 large zucchini, halved lengthwise and cut into ¾-inch slices
- 1 each medium red, yellow and orange bell peppers, cut into 1-inch pieces
- 1 large onion, chopped
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 2 medium tomatoes, chopped
- Nonstick vegetable spray
- 1 loaf (about 1 pound) unsliced whole grain crusty Italian bread
- 1 cup sharp cheddar cheese, shredded
- 1 cup Parmesan cheese, shredded, plus extra for serving
- 6 large eggs
- 2 cups 1% milk
- ½ teaspoon salt (optional)
- ½ teaspoon pepper
Instructions
- Preheat oven to 400 degrees.
- In a large roasting pan, toss together the zucchini, peppers, onions, oil and Italian seasoning. Roast until tender, about 30 minutes, stirring once halfway through. Remove from oven and stir in the tomatoes. Set aside.
- Coat a 9-by-13-inch baking dish with nonstick vegetable spray. Trim ends from the bread and cut loaf into 1-inch slices.
- Layer half the bread in the prepared baking dish. Top with half the roasted vegetables and half of each cheese. Repeat layers.
- In a medium bowl, whisk together the eggs, milk, salt (if using) and pepper. Pour mixture into the baking dish over the top layer of cheese. Cover strata and refrigerate for 6 hours or overnight.
- Remove strata from refrigerator and preheat oven to 375 degrees. Bake, uncovered, until golden brown, about 50 minutes. Let stand for 10 minutes before cutting.
- Serve warm with a sprinkle of Parmesan cheese on top of each serving.
