Ingredients
- 2 medium sweet potatoes, washed and patted dry
- 2 tablespoons arrowroot powder
- ½ teaspoon salt
- Ground black pepper
- 2 tablespoons avocado oil
Aioli:
- ½ cup mayonnaise
- 1 teaspoon lemon juice
- ¼ teaspoon pumpkin spice
- ⅛ teaspoon garlic powder
- ⅛ teaspoon onion powder
Instructions
- Preheat convection oven to 425 degrees or conventional oven to 450 degrees. (Convection is better for crispness and browning.) Line a baking sheet with parchment paper.
- Trim about ¼-inch off one side of each sweet potato to create a flat base. With the flat side down, cut the potatoes into planks, then into fries.
- On the sheet pan, toss the potatoes with the arrowroot powder, salt and pepper. Drizzle with oil and toss to coat. Spread potatoes out into a single, even layer.
- Roast until golden on the bottom, about 20 minutes. Flip fries with a spatula and continue roasting until golden, about 20 more minutes.
- In a small bowl, whisk together all aioli ingredients until combined and smooth.
- Serve fries immediately alongside aioli for dipping.
