Ingredients

  • 2 medium sweet potatoes, washed and patted dry
  • 2 tablespoons arrowroot powder
  • ½ teaspoon salt
  • Ground black pepper
  • 2 tablespoons avocado oil

Aioli:

  • ½ cup mayonnaise
  • 1 teaspoon lemon juice
  • ¼ teaspoon pumpkin spice
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder

Instructions

  1. Preheat convection oven to 425 degrees or conventional oven to 450 degrees. (Convection is better for crispness and browning.) Line a baking sheet with parchment paper.
  2. Trim about ¼-inch off one side of each sweet potato to create a flat base. With the flat side down, cut the potatoes into planks, then into fries.
  3. On the sheet pan, toss the potatoes with the arrowroot powder, salt and pepper. Drizzle with oil and toss to coat. Spread potatoes out into a single, even layer.
  4. Roast until golden on the bottom, about 20 minutes. Flip fries with a spatula and continue roasting until golden, about 20 more minutes.
  5. In a small bowl, whisk together all aioli ingredients until combined and smooth.
  6. Serve fries immediately alongside aioli for dipping.
