Salmon with Herby Green Sauce

Ingredients

  • 1 avocado
  • ½ cup fresh parsley, packed 
  • ½ cup fresh basil, packed
  • 3 cloves garlic
  • ½ cup olive oil
  • ½ cup water
  • Juice of 2 lemons
  • 1 teaspoon salt, plus more to taste
  • ½ cup shelled pistachios
  • 4 salmon fillets (about 1 ¼ salmon)
  • Black pepper, to taste

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a food processor, combine the avocado, parsley, basil, garlic, oil, water, lemon juice and 1 teaspoon salt. Pulse until completely combined. Add the pistachios and pulse again until smooth. Set aside.
  3. Place salmon on the prepared baking sheet. Season with salt and pepper and bake for 5 minutes, or until cooked through in the center.
  4. Transfer salmon to serving plates. Top each fillet with herb sauce and serve immediately.
