Sea Salt Caramel Truffles

Ingredients
- 16 ounces bittersweet chocolate
- ¾ cup heavy cream
- ¾ cup caramel sauce (homemade or store bought)
- ⅓ cup butter
- 1 ½ teaspoons sea salt
- ¼ cup cocoa powder
Instructions
- Place chocolate in a medium bowl. Set aside.
- In a saucepan over medium heat, combine the heavy cream, caramel sauce and butter. Warm until butter is melted and mixture is hot but not boiling, about 3 to 4 minutes. Pour into the bowl with the chocolate and stir with a spatula until chocolate has melted.
- Pour mixture into a 9-by-13-inch baking dish and sprinkle with sea salt. Chill in the fridge for 2 to 3 hours, or up to overnight.
- Once chilled, use a ½-ounce cookie scoop to scoop the mixture into truffles. Place a few truffles at a time in a fine mesh strainer and coat with cocoa powder while shaking to remove excess.
- Store truffles in an airtight container in the refrigerator until ready to serve or gift.
