Ingredients
Passion Fruit Sauce:
- ¼ cup fresh passion fruit pulp with seeds (about 2 to 3 passion fruits)
- ½-1 habanero pepper, seeded and diced (optional)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon agave
- 2 tablespoons sugar
- ¼ teaspoon salt
Scallops:
- ½ pound sea scallops
- 2 tablespoons extra-virgin olive oil
- Salt, to taste
- Pepper, to taste
- 1 tablespoon unsalted butter
Instructions
- In a blender, combine all passion fruit sauce ingredients. Blend until smooth, then transfer sauce to a medium bowl. Set aside.
- Heat a cast-iron skillet over medium heat. Pat scallops dry between two paper towels. Place in a small bowl and toss with the oil, salt and pepper.
- Place the scallops in the preheated skillet, and sear for approximately 2 ½ minutes per side, or until golden brown. When nearly done, add the unsalted butter and baste the scallops with the melted butter as they finish cooking.
- Transfer scallops to serving plates or shallow bowls and top each serving with desired amount of passion fruit sauce. Serve immediately.
