Ingredients

Passion Fruit Sauce:

  • ¼ cup fresh passion fruit pulp with seeds (about 2 to 3 passion fruits)
  • ½-1 habanero pepper, seeded and diced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon agave
  • 2 tablespoons sugar
  • ¼ teaspoon salt

Scallops:

  • ½ pound sea scallops
  • 2 tablespoons extra-virgin olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon unsalted butter

Instructions

  1. In a blender, combine all passion fruit sauce ingredients. Blend until smooth, then transfer sauce to a medium bowl. Set aside.
  2. Heat a cast-iron skillet over medium heat. Pat scallops dry between two paper towels. Place in a small bowl and toss with the oil, salt and pepper. 
  3. Place the scallops in the preheated skillet, and sear for approximately 2 ½ minutes per side, or until golden brown. When nearly done, add the unsalted butter and baste the scallops with the melted butter as they finish cooking.
  4. Transfer scallops to serving plates or shallow bowls and top each serving with desired amount of passion fruit sauce. Serve immediately.
