Snickerdoodle Blondie Bites
Combine two classic desserts into one with a pan of chewy Snickerdoodle Blondie Bites sprinkled with sweet cinnamon sugar. These perfectly portable treats are easy to pack for potlucks and tailgate parties – plus, they go great alongside a cup of hot chocolate, coffee or tea.

Ingredients
- 2 ⅔ cups all-purpose flour
- 2 teaspoons baking powder
- 1 ½ teaspoons cinnamon, divided
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 cups light brown sugar, packed
- 1 tablespoon vanilla extract
- 2 large eggs, room temperature
- 1 ½ teaspoons granulated sugar
Instructions
- Preheat oven to 350 degrees. Coat a 9-inch square baking dish with nonstick vegetable spray. Set aside.
- In a medium bowl, whisk together the flour, baking powder, 1 teaspoon cinnamon, nutmeg and salt.
- In a large bowl, use a hand or stand mixer to cream together the butter and brown sugar until light and fluffy, about 5 minutes. Add vanilla and mix again until combined. Add the eggs 1 at a time, mixing well between each addition. Gradually add the flour mixture and mix until just combined. Spread batter into the prepared baking dish.
- In a small dish, combine the granulated sugar with the remaining ½ teaspoon cinnamon. Sprinkle cinnamon sugar evenly over the top of the batter.
- Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool completely in the pan. Slice into 16 blondie bites to serve.
