Spiced Gingerbread Loaf

A Spiced Gingerbread Loaf combines all the best flavors of the holidays. Made with sweet molasses and warm winter spices like cinnamon, ginger, nutmeg and cloves, this easy recipe is perfect for breakfast, a snack or dessert.

Ingredients

  • 2 cups all-purpose flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon sea salt
  • 1 ½ teaspoons ground ginger
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • ⅓ cup molasses 
  • 3 eggs
  • 1 teaspoon vanilla extract
  • ¼ cup hot water

Glaze (optional)

  • 2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons milk

Instructions

  1. Preheat oven to 325 degrees. Grease a 9-by-5-inch loaf pan and set aside.
  2. In a small bowl, whisk together the flour, baking soda, salt and spices. Set aside. 
  3. In a large bowl, whisk together the brown sugar, oil, molasses, eggs and vanilla.
  4. In a large bowl whisk together molasses, oil, brown sugar, eggs, and vanilla.
  5. Add the dry ingredients to the wet ingredients and mix until almost combined. Add the hot water and mix again until combined. 
  6. Pour batter into the prepared pan. Bake for 60 to 70 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Let cool partially in the pan, then remove loaf from pan and let cool completely on a wire rack. 
  7. If using glaze, combine all glaze ingredients in a small bowl and whisk to combine. Pour glaze over the cooled gingerbread loaf and let set before serving.
