Tomato Pie with White Cheddar and Country Ham offers a new take on traditional tomato pie. Made in one bowl with a little help from a store-bought pie crust, this family-friendly dish comes together in just 15 minutes of hands-on prep time.

Ingredients

  • 1 premade pie crust
  • ½ cup country ham, minced
  • ½ cup mayonnaise
  • 8 ounces white cheddar cheese, grated
  • 2 large, very ripe tomatoes, thinly sliced
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese, grated
  • ½ cup chow chow (optional)

Instructions

  1. Preheat oven to 350 degrees. Unroll pie crust and place into the bottom of a pie pan. Set aside.
  2. In a large bowl, combine the ham, mayonnaise, cheddar cheese, tomatoes and pepper. Spoon mixture evenly into the prepared pie crust. Sprinkle Parmesan over the top. Bake for 50 minutes.
  3. Serve tomato pie warm or at room temperature with chow chow if desired.
