Triple Melon Summer Salad

Watermelon, cantaloupe, and honeydew melons combine in a flavorful Triple Melon Summer Salad with mixed greens and a zesty lemon and mint dressing. Sprinkle crumbled goat cheese and chopped pistachios over the top for the perfect finish.

Ingredients

For the Dressing:

  • ⅓ cup olive oil
  • ¼ cup lemon juice
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ cup black pepper

For the Salad:

  • 2 cups mixed greens
  • 2 cups honeydew melon, cubed or scooped with melon baller 
  • 2 cups cantaloupe, cubed or scooped with melon baller 
  • 2 cups watermelon, cubed or scooped with melon baller 
  • ½ cup goat cheese, crumbled
  • ½ cup pistachios, shelled and chopped

Instructions

  1. In a jar with a lid, combine all dressing ingredients. Close jar and shake well to combine. Place in refrigerator until ready to serve salad.
  2. Place greens in the bottom of a large serving bowl. Top with melon cubes or balls, goat cheese, and pistachios.
  3. Drizzle salad with dressing and toss to combine. Serve immediately.
