Triple Melon Summer Salad
Watermelon, cantaloupe, and honeydew melons combine in a flavorful Triple Melon Summer Salad with mixed greens and a zesty lemon and mint dressing. Sprinkle crumbled goat cheese and chopped pistachios over the top for the perfect finish.

Ingredients
For the Dressing:
- ⅓ cup olive oil
- ¼ cup lemon juice
- 2 tablespoons fresh mint, chopped
- 1 teaspoon lemon zest
- ½ teaspoon salt
- ¼ cup black pepper
For the Salad:
- 2 cups mixed greens
- 2 cups honeydew melon, cubed or scooped with melon baller
- 2 cups cantaloupe, cubed or scooped with melon baller
- 2 cups watermelon, cubed or scooped with melon baller
- ½ cup goat cheese, crumbled
- ½ cup pistachios, shelled and chopped
Instructions
- In a jar with a lid, combine all dressing ingredients. Close jar and shake well to combine. Place in refrigerator until ready to serve salad.
- Place greens in the bottom of a large serving bowl. Top with melon cubes or balls, goat cheese, and pistachios.
- Drizzle salad with dressing and toss to combine. Serve immediately.
