Watermelon Feta Salad with Mint

Ingredients

  • ⅓ cup olive oil
  • ⅓ cup mint leaves, coarsely chopped
  • 1 tablespoon chives, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup feta cheese crumbles
  • 8 cups seedless watermelon balls

Instructions

  1. In a large bowl, whisk together oil, mint, chives, lemon juice, maple syrup or honey, salt, and pepper. 
  2. Gently fold the feta crumbles and melon balls into the dressing until completely coated and combined. Serve immediately.
