Ingredients
- ⅓ cup olive oil
- ⅓ cup mint leaves, coarsely chopped
- 1 tablespoon chives, chopped
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup or honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup feta cheese crumbles
- 8 cups seedless watermelon balls
Instructions
- In a large bowl, whisk together oil, mint, chives, lemon juice, maple syrup or honey, salt, and pepper.
- Gently fold the feta crumbles and melon balls into the dressing until completely coated and combined. Serve immediately.
