Upside-Down Pecan Bundt Cake
Upside-Down Pecan Bundt Cake is like a decadent pecan pie in cake form. Made with a cinnamon sugar and pecan layer in the bottom of the Bundt pan to form a nutty, crunchy topping when flipped, this cake makes a delectable dessert to finish off any holiday meal.

Ingredients
Pecan Topping:
- 2 cups pecans, chopped
- ½ cup (1 stick) unsalted butter, melted
- ¾ cup brown sugar
- 3 tablespoons maple syrup
- ½ teaspoon cinnamon
- ½ teaspoon salt
Cake:
- ¾ cup vegetable oil
- 1 ½ cups sugar
- ¾ cup sour cream
- 4 eggs
- 1 tablespoon vanilla extract
- ½ teaspoon almond extract
- 2 ¾ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
Instructions
- Preheat oven to 350 degrees. Liberally grease a Bundt cake pan with cooking spray. Set aside.
- In a small bowl, mix together all pecan topping ingredients. Pour into the bottom of the cake pan.
- In a large bowl with a hand or stand mixer, combine the oil, sugar, sour cream, eggs, and vanilla and almond extracts. Mix until well combined.
- In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. Add dry ingredients to the bowl of wet ingredients and mix until just combined.
- Pour batter into the Bundt pan over the pecan mixture. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool for about 15 minutes, then carefully flip over onto a wire rack and let cool completely before serving.
Tips & Notes
Some pecans may stick to the bottom of the Bundt pan, but you can stick them back on the top of the cake while it’s still warm.
