White Chocolate Lemon Biscotti

Ingredients

  • 4 cups all-purpose flour
  • ¼ cup plus 2 tablespoons sugar, divided
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 lemon, zested and juiced
  • 9 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1 ¼-1 ½ cups heavy cream, divided

White Chocolate Topping:

  • ½ cup white chocolate 
  • 1 tablespoon olive oil
  • 1 lemon, zested
  • Flaky sea salt

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
  2. In a large bowl, use a hand or stand mixer fitted with the paddle attachment to mix together the flour, ¼ cup sugar, baking powder, salt and zest of 1 lemon. With the mixer running on low, add the melted butter, lemon juice, vanilla and 1 ¼ cups of cream until the dough just comes together. If mixture is too dry and crumbly, add more cream, about 1 tablespoon at a time, until the dough just comes together.
  3. Divide dough into two equal portions and shape each into a rectangle about 12 inches long, 6 inches wide and ½ inch thick. Smooth out any cracks in the dough and place on the prepared baking sheet.
  4. Brush about 2 tablespoons of cream over the dough and sprinkle with remaining 2 tablespoons sugar. Bake for 20 minutes. Allow to cool slightly, then slice each rectangle into ½-inch pieces of biscotti. Return sliced biscotti to the baking sheet and bake for an additional 30 minutes, flipping halfway through. Set biscotti aside to cool completely.
  5. Meanwhile, in a microwave-safe bowl, combine the white chocolate and oil. Microwave on high in 10-second increments, stirring between each, until chocolate is completely melted and smooth. 
  6. Drizzle chocolate over cooled biscotti and sprinkle with remaining lemon zest and flaky sea salt. Allow chocolate to set completely before serving or gifting.
