Ingredients
- 2 tablespoons olive oil, plus more for drizzling
- 2 ½ pounds onions (about 3 large onions), thinly sliced
- 1 cup vegetable stock or water
- 1 teaspoon fresh thyme (or ½ teaspoon dried)
- 1 ½ teaspoons salt
- ½ teaspoons black pepper
- 1 package puff pastry (about 17 ounces), thawed
- 4 ounces goat cheese, crumbled
- 2 tablespoons heavy cream
- 2-3 tablespoons fresh parsley, chopped
Instructions
- In a large skillet, combine the olive oil, onions, vegetables stock or water, thyme, salt and pepper. Bring to a boil over high heat, then reduce heat to medium-high, cover with a lid and continue cooking for 15 minutes, stirring occasionally.
- Uncover and continue cooking 25 more minutes or until the onions are very soft and slightly browned. Transfer onions to a plate and spread out to cool.
- Preheat oven to 425 degrees and line a baking sheet with parchment paper. Unroll puff pastry onto the lined baking sheet, pinching the two pieces together to form one long piece. Poke pastry with a fork in several places to prevent air pockets.
- Spread onions evenly over the puff pastry, leaving a 1-inch border around the edges. Top onions with crumbled goat cheese.
- Fold the four edges of the tart toward the center, stopping at the onions, and pinch slightly to seal. Brush edges with heavy cream and bake for 35 to 40 minutes or until edges are golden.
- Allow tart to cool slightly, then finish with a drizzle of olive oil and a sprinkle of fresh parsley before slicing and serving warm.
