Easy Meatball Subs

Homemade meatballs simmered in a quick and easy sauce make for the best Easy Meatball Subs. Load them up on hoagie rolls with provolone and broil until the cheese reaches bubbly perfection for the ultimate sandwich. Short on time? Feel free to skip the bread and serve the meatballs on their own.

Ingredients

For the Meatballs:

  • 1 pound ground beef
  • ½ cup panko
  • 2 eggs
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • ½ teaspoon cayenne pepper
  • ¾ teaspoon salt (optional)
  • ½ teaspoon black pepper

For the Sauce:

  • 18 ounces (1 jar) grape jelly
  • ¼ cup ketchup
  • 2 tablespoons Sriracha sauce
  • 2 teaspoons Worcestershire sauce

For Assembly:

  • 5 hoagie rolls
  • ⅓ cup mayonnaise
  • 10 slices provolone cheese
  • ½ small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with aluminum foil. Set aside.
  2. In a medium bowl, mix together all meatball ingredients by hand until thoroughly combined. Using hands or two spoons, shape mixture into small meatballs about 1 inch thick. Place meatballs on prepared baking sheet and bake for 15 minutes. Set aside to cool slightly.
  3. Transfer meatballs to a medium saucepan and add the jelly, ketchup, Sriracha sauce and Worcestershire sauce. Bring to a boil over high heat, then reduce heat to medium-high and continue cooking the meatballs in the sauce while stirring occasionally for 30 minutes, or until the sauce has thickened.
  4. When meatballs are finished cooking, preheat broiler. Open each hoagie roll and spread with about 1 tablespoon mayonnaise. Add 1 slice provolone to each half and broil open-face rolls for 1 to 2 minutes until the cheese is melted and the bread is slightly toasted. 
  5. Fill each sub with about 5 meatballs, sliced red onion and parsley. Serve warm.
