Gingerbread French Toast

Indulge in gingerbread for breakfast with a stack of decadent Gingerbread French Toast. Add a dollop of whipped cream, a drizzle of molasses-maple sauce and a sprinkle of gingerbread cookie crumbs for the ultimate morning treat.

Ingredients

French Toast:

  • 1 package (14.5 ounces) gingerbread cake mix*
  • 6 eggs, divided
  • 1 teaspoon ground ginger 
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1-2 tablespoons vegetable oil

Topping:

  • ½ cup butter
  • ½ cup molasses
  • ½ cup maple syrup
  • Whipped cream, optional
  • Gingerbread cookie crumbs, optional

*Betty Crocker and Krusteaz offer a 14.5-ounce gingerbread cake mix during the holidays. Check your store for any brand that offers this size mix.

Instructions

  1. Preheat oven to 350 degrees. Spray a 5-by-8-inch loaf pan with nonstick cooking spray and set aside.
  2. In a large bowl, combine the cake mix, 2 eggs and 1 cup water. Spoon into prepared loaf pan and bake for 35 minutes or until the center springs to the touch. Allow gingerbread loaf to cool, then cut into 10 equal slices. 
  3. In another large bowl, whisk remaining 4 eggs together with ginger, cinnamon and vanilla.
  4. Heat oil in a large skillet or on a griddle over medium heat. Dredge gingerbread slices into egg mixture on both sides and place into skillet or on griddle. (You may have to cook in batches.) Cook about 4 minutes on each side until egg coating is golden brown.
  5. In a microwave-safe bowl, combine the butter, molasses and maple syrup. Microwave until butter is melted, then stir mixture until smooth.
  6. Pour sauce desired amount of sauce over each serving of French toast and top with whipped cream and gingerbread cookie crumbs, if using.

Tips & Notes

The gingerbread loaf can be baked a day in advance to save time.
