Gingerbread Layer Cake
The favorite holiday flavors of warm cinnamon, spicy ginger and sweet molasses combine in an impressive Gingerbread Layer Cake with cream cheese frosting. Decorate the outside with miniature gingerbread men and crushed gingersnaps for an extra-festive finishing touch.

Ingredients
Cake:
- 1 cup butter, room temperature
- 1 ½ cups sugar
- 1 cup dark molasses
- 4 eggs
- 1 teaspoon vanilla extract
- 4 ½ cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 cups buttermilk
Cream Cheese Frosting:
- ¾ cup (1 ½ sticks) butter, room temperature
- 12 ounces cream cheese, room temperature
- 2 teaspoon vanilla extract
- 6 cups powdered sugar
- 6-8 tablespoons milk
Decorations:
- ½ cup crushed gingersnaps
- Miniature gingerbread men
Instructions
- Preheat oven to 325 degrees. Grease and flour 3 9-inch cake pans. Set aside.
- In a large bowl, use a hand or stand mixer to mix together the butter, sugar, molasses, eggs and vanilla until completely combined.
- In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon and salt. Add half the dry ingredients to the wet ingredients and stir until just combined. Add half the buttermilk and stir until just combined. Repeat with remaining dry ingredients and buttermilk.
- Distribute half the batter evenly between each of the 3 prepared cake pans. Set aside the remaining batter. Bake the first three layers for 20 minutes or until a knife inserted into the center of the cake comes out clean. Allow layers to cool completely, then turn out onto parchment paper.
- Grease and flour the pans again and repeat step 4 with remaining batter.
- While the final 3 layers are cooling, prepare the frosting. In a large bowl, use a hand or stand mixer to beat together the butter, cream cheese and vanilla. Alternate adding 1 cup powdered sugar and 1 tablespoon milk at a time, beating between each addition, until all sugar and milk have been added and frosting is creamy and spreadable.
- Assemble the cake layers, frosting the cake evenly between each layer. Frost around the sides and on top. Decorate cake with crushed gingersnaps and mini gingerbread men before serving.
